1 cups Cantaloupe Cubes ( 2 small California melons)

1/2 cups Orange sections

3/4 cup seeded California Grapes

1/2 cup diced Celery

10 California Dates ( pitted and sliced)

1/2 cup Walnuts (broken)

toss ingredients together and chill. Serve in crisp iceberg lettuce cups and top with dressing ( serves 4)

Optional Cream Cheese Dressing

- 1 3 oz package Cream Cheese

1 1/2 tablespoon Lemon Juice

3 tablespoons Currant Jelly

1/2 cup heavy Cream ( whipped)

Soften cream cheese, add lemon juice and currant jelly and heat until smooth.

Lastly fold in whipped cream and chill well in the fridge or outdoors in the cold like manitoba winter

Date Cheese Pudding (California Dates)

1 cup California Dates

1 California Orange

1 cup Raw (Brown unPurified Sugar ) that is firmly packed

2 tablespoons Water

1 cup sifted whole wheat Flour

1 teaspoon Salt

1 cup grated Cheddar Cheese

1/4 cup Butter

Chop California Dates. Cut orange into quarters and grind in heavy duty food grinder. Combine dates, orange citrus and brown sugar. Spread mixture into bottom of signature baking pan. Sprinkle with water. Combine flour, salt and cheese. it a pasty blender or knife, cut butter into flour mixture or until flour mixture is crumbly. Sprinkle over fruit mixture. Bake in 350 degrees oven for 30 minutes ( approx).

Indio Date Nut Bread

1/4 cup chopped Walnuts

1 cup cut-up pitted California Dates

1 1/2 teaspoons Baking Soda

1/3 teaspoon Salt

3 tablespoons Shortening

1 cup canned Apple SAUCE ( heated or warmed)

2 EGGS

1 Tablespoon VANILLA EXTRACT ( not artificial for best taste)

1 cup granulated Sugar

1 1/2 cups sifted all purpose FLOUR

With fork , mix walnuts, dates , baking soda and salt. Add shortening and applesauce. Let stand 20 minutes. Start heating oven to 50 degrees F. Grease a 9 x 5 loaf pan. With fork , beat eggs well. Beat in sugar , vanilla and flour. Mix in date mixture until just blended; turn into pan. Bake one hour ( 1 hour), and 5 minutes ( or just until cake tester, inserted into center comes out clean). Cool in pan ten ( 10) minutes. Remove wire rack to finish cooling. Then wrap in foil. Store overnight before slicing.

note: slices readily and easily when frozen.

1 can ( 3 ounces) Chow Mein Noodles

2 tablespoons silvered California Almonds

Melt almond bars in top of double boiler. Stir in chow mein noodles and slivered almonds ( toasted and chopped). Form into clusters and onto wax waxed paper. Chill. Garnish with bits of candied ginger.
