California Crunchy Top Cheesecake

Ingredients

2 Cups all-purpose flower

1 Cup Sugar

1 Tablespoon Baking Powder

1 Teaspoon Salt

1/3 cup soft Butter

1 Egg

1/2 cup finely cut Funsten Walnuts

1/2 cup Sugar

1 teaspoon CINNAMON

Sift flour , sugar baking powder and salt into 3- quart bowl of electric mixer. Beat in milk, butter and egg at medium speed ( 2 minutes), scraping sides of bowl often. Pour into greased and floured 9 inch square pan. Combine Walnuts ,sugar and cinammon in a bowl. Mix thoroughly and sprinkle over batter. Bake in 350 degrees F oven about 36 minutes ( or till cake pulls away from sides of pan.

2 cups cooked or canned GARBANZOS  (drained)

1 can ( 8 3/4 ounces) golden whole Kernel CORN ( drained)

1 cup diced ( or sliced) CELERY

1/2 cup chopped ONION

2 tablespoons diced PIMENTO

1/2 cup diced GREEN PEPPER

Combine ingredients and moisten to taste with Golden Gate SALAD DRESSING

1 Onion ( chopped)
2 cloves Garlic  ( chopped)

2 tablespoons Parsley( chopped0

Cooking Oil

4 fresh California Tomatoes ( chopped)

2 lbs Rockfish  ( cut in bite sized pieces)

Lightly brown , onion , garlic and parsley in frypan  ( approximately 5 minutes).  Add tomato sauce and tomatoes and simmer about 15 minutes.  Add fish and simmer about 20 minutes ( stirring ocasionally).

Serve staming hot in soup bowls.

1 1/2 lbs Fish Fillets or Fish Steaks ( either fresh or frozen)

1 quart Boiling Water

1 12/ teaspoons salt

Thaw frozen fish ( as per baked ,stuffed fish recipe).  Place fish in well greased steamer insert pan.  Sprinkle fish with salt.  Bring the water to its boiling point.  Let the water boil furiously .  Insert the steamer pan and cover tightly.  ( Spices , wine , grape or apple juices may be added to water as to preferences).    Cover.  Cool. remove skin and bones.  Steamer fish may be covered and sauce  or chilled and flaked for salads.

pr Beef Brisket Paprika
4 to 5 lbs Lean Beef Brisket

4 medium Onions

1 tablespoon Paprika

2 teaspoons Salt

2 teaspoons minced Garlic

1/2 cup Water ( broth or wine)

Trim off outside fat from beef brisket.  Grate enough onion, catching juice to get a measure of 1/3 cup.  Slice remaining onions.  Make a paste with grated onion, paprika, salt, minced garlic and paprika, salt minced garlic and pepper.  Put brisket flat in broiler or baking pan.  Spread with half peprika paste.  Roast in 500 F oven 15 minutes.  Turn beef, spread with remaining paprika paste and return to 500 F oven 15 minutes longer.  Cover beef with onion slices.  Add water, cover pan lightly with foil.  Return to oven and reset temperature control to 325 F.  Bake 2 1/2 hours longer.

4 lean Beef Short Ribs

1 tablespoon Butter

1 medium size Onion (chopped)

1 cup chopped Celery

1 teaspoon Salt

1/8 teaspoon Pepper

4 medium sized Carrots ( thinly sliced)

1/2 teaspoon Thyme

1/8 teaspoon Sage

Trim fat from ribs. Brown neef in butter and heavy skillet or Dutch oven.  While browning , add half of onion, celery , salt and pepper.  When brown, cover beef with remaining vegetables.  Sprinkle with remaining salt and pepper and crumbled Thyme and sage.  Cover tightly.  Bake in 275 F oven 3 hours, until very tender.

1 Gallon Water

1/4 cup unslaked LIME

8 cups (field) CORN

Mix water and lime in a galvanized container.

Add corn and cook until bubbling stop. Cook (but do not boil) from one to two hours (until corn starts to peel). Remove from heat and let stand a day.

Separate hulls from kernels and wash corn in several cold water rinses to remove lime traces. Drain and grind into mash.

2 cups Pinion Nuts

3/4 cup Water

1/4 to 1/4 teaspoon Salt

2 tablespoon OIL

Chop mute coarsely and roll with rolling pin. Mix the meal with water and salt till batter is stiff. Let batter rest for an hour before frying.

Let batter rest for an hour before frying. Pour oil into skillet and heat to sizzling. Drop batter from tablespoon into heated oil and form into six pancakes, shaping with greased pancake turner. Lower heat and flip cakes to brown evenly on both sides.

Spanish Settlers Brought Other Products from Distant Parts to California from the Old World- corn, wheat , squash , beans , chick peas ( garbanzos) , numerous varieties of chili peppers , tomatoes , fruits , vegetables , grapes , olives , figs , oranges , chocolate , cattle ,sheep , goats and hogs.

Life in the Spanish Missions depended on planting and harvesting. With corn came nixtamal, mesa and tortillas. Two kinds of tortillas – corn and flour were used as “staple bread” or edible wrapper for many foods. Inside the missions, food consisted mainly of grain, fruits and vegetables.

In the towns and on the rancheros, beef was added to the fare.

Indians of California , before the coming of the Spaniard , subsisted on whatever wild grains , seeds m berries , fruits , greens , roots and bulbs they could gather, and the wild game . Birds, shellfish and insects that these California Aboriginals could capture. We call the California Indians the acorn culture because their dependency on acorns from native oaks as a staple food. In order to make acorns palatable, it was necessary to leach the nuts of their tannic acid. This was done by running water through ground acorn meal. Leached meal was then made into a kind of mash or gruel and eaten with the hands.

Often grains and other foodstuffs were included with in the mush or meat was added to make a stew. Rabbits, deer and quail as well as pheasants were abundant were abundant in the California wilds and outback. Clams and abalone were to be easily had for taking along the California coastline, and of course fish were to be found everywhere along streams and in the Pacific Ocean.
