California Crunchy Top Cheesecake

California Crunchy Top Cheesecake

Ingredients

2 Cups all-purpose flower

1 Cup Sugar

1 Tablespoon Baking Powder

1 Teaspoon Salt

1/3 cup soft Butter

1 Egg

1/2 cup finely cut Funsten Walnuts

1/2 cup Sugar

1 teaspoon CINNAMON

Sift flour , sugar baking powder and salt into 3- quart bowl of electric mixer. Beat in milk, butter and egg at medium speed ( 2 minutes), scraping sides of bowl often. Pour into greased and floured 9 inch square pan. Combine Walnuts ,sugar and cinammon in a bowl. Mix thoroughly and sprinkle over batter. Bake in 350 degrees F oven about 36 minutes ( or till cake pulls away from sides of pan.

1/2 cups soft Butter  ( or margarine)

2.3 cups mild flavored Honey

2 Eggs

2 tablespoon Milk

1/2 teaspoon Vanilla

1/2 teaspoon Salt

1 teaspoon Baking Powder

1 teaspoon Soda

1 cup Flaked Coconut ( toasted)

1 cup mashed Bananas ( 2 or 3)

2 teaspoon grated California Lemon Peel

1 teaspoon California FRESH Lemon Juice

In large mixing bowl , cream butter.  Continue creaming while adding honey in a fine stream.  Beat in eggs one at a time.  Stir in milk and vanilla.  Sift flour with salt, baking powder and soda.  Add toasted coconut. Blend together mashed bananas , lemon peel and juice.  Add dry ingredients alternately with banana mixture, blending only until all dry ingredients are moistened.  Spoon into greased 9 x 5 x 3 pan.  Heat oven to 350 degrees F, and bake to 55 minutes or until loaf pan tests done.  Cool in pan five minutes.  Remove from pan and cool on wire rack.

Bread slices thinner if stored overnight or frozen.

Mandarin Muffins

1 can ( 11 ounces) Mandarin Oranges

1 1/2 cups all purpose Flour

1 3/4 teaspoons Baking Soda

1/2 teaspoons each Salt and 1/2 teaspoon Nutmeg spices

1/4 teaspoon Allspice

1/2 cup Sugar

1/3 cup Shortening

1 Egg ( slightly beaten)

1/4 cup Milk

1/3 cup Melted Butter

1/4 cup Sugar mixed with 1/2 teaspoon Cinnamon

Drain mandarin oranges  well and spread on paper towels.  To mix batter, sift flour , measure, then sift with baking powder , salt , nutmeg, allspice and sugar into large bowl.  Cut in shortening until mixture is all in fine particles and pieces.  Combine egg and milk and add all at once.  Mix just until flour is moistened. Add the drained sugar segments and mix lightly until evenly distributed.  Spoon into large greased muffin pans . filling 3/4 full.

Bake for 20 minutes in 350 degrees F oven.  Remove from pans while hot and dip tops in melted butter, then roll in cinnamon-sugar  . ( Makes a dozen muffins).

Ingredients::

1/3 cup Lard

2 pounds of Mesa

2 teaspoons Baking Powder

2 teaspoons salt

3/4 cup water

Beat lard until light and fluffy. Mix with mesa and add baking powder and salt. Beat until mixture is fluffy (test by dropping a spoonful into a cup of cold water; mesa dough should float to the top. If mass is too dry, add water and continue beating the mixture.

24 Corn Husks

2 lbs Tamale Dough

Tamale Filling

Cover Corn Husks with warm water and soak till softened; drain. Open husks individually and spread a thin layer of tamale dough on smooth side of husk. Spread a tablespoon of meat filling down center of tamale dough. Fold filled husk into thirds lengthwise (To prevent leaking from the husk, prepare another husk with mass dough and wrap it around the first. Bottom and top of each husk will be unfilled; tie these ends with a string.) Place Tamales upright (or set them in layers for about 45 minutes. (Tamales are ready when husks pull away from the Tamale dough. Makes about a dozen)
